Royal Reds

Royal Reds (Pleoticus Robustus) are perhaps the softest and most delicate of all our native shrimp species. This vibrant red shrimp never sees the light of day, preferring the cold dark depths out at the edge where the gently sloping bottom of the Gulf drops abruptly off the continental shelf.

Flavor Profile:

Delicate sweet meat, has more of a distinct ocean flavor than any species of Florida shrimp. Royal Reds maintain a rose color and lend themselves to a buttery taste close to that of lobster flavor Profile: Delicate sweet meat, has more of a distinct ocean flavor than any species of Florida shrimp. Atlantic white shrimp

Atlantic white shrimp are found along the Atlantic coast from New York to Florida and in the Gulf of Mexico. The shrimp prefer shallow, warm, low-salinity waters up to about 90 feet deep with organic-rich muddy bottoms. White shrimp are a smart seafood choice because they are sustainably managed and responsibly harvested under U.S. regulations.

Flavor Profile:
Flavorful and sweet. Large white shrimp don't develop the slight iodine taste of other large shrimp. Slightly more tender than other shrimp, and their shells are somewhat softer and easier to peel.

Key West (Pink shrimp)

Key West (Pink shrimp) are found from southern Chesapeake Bay to the Florida Keys and around the coast of the Gulf of Mexico to the Yucatan south of Caho Catoche, Mexico. They typically have a dark-colored spot on each side between their third and fourth abdominal segments. Their tail usually has a dark blue band (rather than the purplish band found on brown shrimp).

It contains omega-3 fatty acids and is low in saturated fat. Eating shrimp improves heart health. They're also great for those looking to drop a few pounds because they're low in calories. In fact, you get less than 80 calories in 3 ounces. (medicalnewstoday.com)
Flavor Profile:

Prized for their sweet, tender meat. They are devoid of the pungent taste some white and brown shrimp have.
